The philosophy of Facchini Brothers is simple: to use only from local farms, ensuring the utmost freshness and quality of the raw ingredients. Once it arrives at the dairy, the milk is skillfully processed. After the initial processing phase, the curd is carefully broken, and the fresh product is laid out on the table for the "curd laying" phase. Subsequently, che cheese is placed in suitable molds, undergoing a dry salting process.
Once these stages are completed, the cheese is transferred in rooms with controlled temperatures ranging between 10 and 15 °C, allowing the aromas and flavors to harmoniously develop. When the first white moulds begin to emerge, the surface of the cheese is delicately treated with olive oil infused with selected herbs, adding depth and complexity to its unique flavors. After approximately 5-6 months, the cheese is placed in linen or cotton sacks, or preserved in crates to maintain its original shape, before being placed in the fermentation cellar. During this crucial phase, the cheese acquires the distinctive characteristics that only the aging in pits can offer.
