Their story begins thanks to three young entrepreneurs - Annaclara Sibilano, Filippo Cannito, and Marianna Difino - united by a passion for  Apulian culinary tradition and the desire to bring these authentic flavors to tables around the world.

They use only high-quality Italian ingredients, with a preference for organic products. They collaborate closely with local farmers to ensure authenticity and sustainability.

Their pasta is made with Senatore Cappelli durum wheat semolina, an ancient variety that guarantees a unique flavor, and the bronze die extrusion gives the pasta a rough surface that better holds sauces. Moreover, the slow drying process preserves the wheat's properties, ensuring an excellent final product.

13 - 15 minutes.

  • Eggplant Sauce: Prepare a sauce with diced eggplant, peeled tomatoes, garlic, fresh basil, olive oil, salt, and pepper.
  • Cream and Peas: Mix half-penne with fresh or frozen peas, cooking cream, grated Parmigiano Reggiano cheese, garlic, salt, and pepper.
