The quarantino 12-row corn, extremely rare nowadays, used to be the typical variety cultivated in the Marche region up until the 1960s when it was replaced by imported hybrids with a higher yield. The stone-ground corn meal obtained from this variety has a light and velvety taste and is excellent for making a fine-textured, creamy polenta or for delicious baked goods.
