Pesto alla Genovese is a typical sauce of Liguria. The main ingredient of Pesto alla Genovese  is the Basil Genovese P.D.O. (protected designation of origin). The Genovese Basil has permanently linked a part of its history to Liguria, due to mild climate and the care that the inhabitants of Liguria have always devoted to this herb. It grows only in Liguria in the open air during summer, because there is nothing like the sun and the sea-breeze for giving the leaves such an intense perfume and taste. In Genovese dialect it is called “Baxeicò".

The Artigiana Genovese shelf-stable Organic Pesto alla genovese is made by adding some cashew nuts and apple fiber in order to have the shelf life of 12 months. The cashew nuts and the apple fibre are natural and bland ingredients which absorb the natural level of wetness of fresh basil. Pesto alla Genovese means that the recipe is similar to the original one, but it has one or more ingredients which are not allowed by the real original recipe.  That is why in this case it is called “Pesto alla Genovese”.

The success of this particular Pesto in owed to the respect for the culinary traditions of Liguria and to the use of natural ingredients. It is very important to use high quality ingredients to ensure a final high quality well balanced Pesto. 

The Artigiana Genovese takes a great care to get a very genuine, fresh and fragrant product. The presence of a layer of oil on the surface helps to preserve the product in a natural way without the use of preservatives.

The sauce should be thick like a cream and have an emerald green colour. Pesto should be never cooked or heated, it will lose the unique taste and colour.

INGREDIENTS:

Extra virgin olive oil, cashew nuts, Genoese Basil PDO in extra virgin olive oil 27,6%, Parmigiano Reggiano P.D.O., pine kernels, apple fibre, garlic, salt.

It may contain traces of soy, other nuts.

SHELF LIFE:

12 months. Keep in a cool and dry place at room temperature (21 °C - 24 °C).

Once opened, it is advisable to cover with olive oil after use and to store in the fridge.
