This monovarietal oil is obtained by pressing only a single variety of olives named "Frantoio". This variety is quite common in all the olive-growing area of Italy but, depending on the production area and the harvest period, it takes on different characteristics. The intention of the producer Oleum Sabinae was to obtain an oil that was both fresh, fragrant and delicate. To achieve this goal the producer has worked hard to find the right degree of ripeness and therefore the best time to harvest.

The olives are crushed on the same day as the harvest. Once the oil comes out of the crusher it is filtered with a cotton filter to eliminate the natural sediments that would otherwise remain in the tanks putting at risk of the quality of the oil. The product is bottled only when necessary in order to prevent the oil from remaining in the bottle for a long time before being sold to the final consumer.

TASTING NOTES:

Even straight out of the pressed monovarietal Frantoio is tasty and delicate with sweet and spicy nuances. Since the oil of Frantoio variety has a delicate flavor the right combinations are with foods with light flavor: boiled or roasted fish, white meat and salads.

STORAGE:

The oil should be kept in a cool and dry area away from sunlight.
