The flour produced with the Senatore Cappelli durum wheat stone-ground is one of the ancient grains with the highest strength (W=90). This flour has a high digestibility and thanks to the stone grinding the grains retain the germ of the wheat, the noble part of the seed.
This flour is excellent for the preparation of bread, pasta and pizza.
