Pasta d'Alba decided to use the whole grain oats, for this kind of pasta.
Oats are one of the cereals that contain more protein (up to 17%) and less carbohydrates, and is the one that contains the most absolute fat. If we add to this the 11% of fibers, we get one of the cereals with the lowest glycemic index, which makes it particularly suitable for diabetics.
Unlike other cereals such as wheat and barley, when machined oats retains the bran and the germ, which are the parts of the grain in which most of the nutrients and many cardioprotective substances can be found.
It is rich in potassium and B vitamins and above minor contents it has avenin which has a tonic effect, energy and balancing the nervous system.
