Pasta d'Alba produces artisanal pasta made with flours of high quality of organic farming, it is dried at low temperature for more than 20 hours and bronze drawn as per tradition.
The Penne made with 100% Quinoa are undoubtedly an exceptional food from the nutritional point of view but do not expect a pasta comparable to the classic durum wheat Penne and not even the classic gluten-free pasta.
It is a unique but very delicate food especially, to be eaten by the spoon, mainly to be appreciated for the quality of the raw material and less for the texture, more fragile than all other productions of Pasta d'Alba.
The aftertaste, slightly bitter is typical of the raw material, it is recommended to combine it with a good pesto.
Quinoa is a staple food of the people of the Andes, although it is not a cereal it can be used in an equivalent manner. It is particularly rich in nutritional facts: contains all 9 essential amino acids for the body and a protein content is higher than that of rice and wheat.
Quinoa is nutritious and not too caloric. It does not contain gluten so it can be eaten without problems by celiacs.
