SOIL TYPE
Of volcanic origin rich in potassium, phosphorous and other micro elements. Though quick draining, this type of soil retains sufficient moisture to sustain the vine even in time of drought. The high concentration of minerals in the soil favours the production of top quality fruit.
VINEYARD
Colle Gaio vineyard is a North East facing 3 hectare slope in the commune of Monte Porzio Catone at an altitude of 400 metres. It is locally recognized as one of the top crus of Frascati.
VITICOLTURE
Short pruning and radical summer bunch thinning concentrate yields to a mere 20 Hl/ha.
VINIFICATION
The bunches are selected and harvested by hand. 72 hours cold maceration of lightly crushed berries. The very soft pressing of the pomace is followed by a slow and cool temperature controlled fermentation. Then the wine is stored in stainless steel vats until the beginning of the following vintage, when the product is bottled. Colle Gaio bottles are then left to complete their maturation in caves in Tufa soil where the stable temperature is 15 °C.
TASTING NOTES
Bright pale straw colour developing yellow hints with age. Rich, intense nose with herbal overtones. Full-bodied, very rich-textured palate with complex, nutty flavours and great persistence.
SERVING
Serve lightly chilled on its own or with starters. Excellent with soups, fine seafood and fish dishes, white meats and roasts.
