The story of the Facchini Brothers is deeply rooted in the past, when during times of conflict valuable goods were hidden in underground caves and pits. From this ancient practice comes their unmistakable pecorino, shaped by tradition and time.

Every bite reflects a mastery of maturation and preservation, resulting in cheeses of remarkable depth and character. Carefully aged in underground pits, they develop an intense aroma and a unique texture that sets them apart from conventional cheeses.

The philosophy of the Facchini Brothers is simple: to use only milk sourced from local farms, ensuring freshness and exceptional quality. Once delivered to the dairy, the milk is expertly processed. After coagulation, the curd is cut and left to rest before being placed into moulds and dry salted.

The cheeses are then transferred to maturation rooms with controlled temperatures between 10 and 15°C, where aromas and flavours develop harmoniously. When the first natural mould appears, the rind is gently treated with olive oil infused with selected herbs, adding depth and complexity.

After approximately 5–6 months, the cheeses are wrapped in linen or cotton cloths or stored in wooden crates to preserve their shape, before being transferred to the ageing pits. During this crucial phase, they acquire their distinctive character, achievable only through traditional pit maturation.

The Facchini Brothers dairy is distinguished by its unique practice of multiple “infossature”, reusing the same pits throughout the year—a traditional technique handed down from Umbrian culture and the ancient Etruscans. This method creates a natural environment that encourages the development of beneficial microflora, giving the cheese its unmistakable flavour profile.
