Vino Cotto (mulled wine or cooked wine) a traditional product from the Macerata and Ascoli regions, found in the countryside around Loro Piceno, where it holds a rich history, culture, and tradition. The grapes used to make Vino Cotto are local white and red varieties: Trebbiano, Sangiovese, and Montepulciano.
The grapes are pressed, and the resulting must is placed in copper kettles and boiled slowly over a direct wood fire for about 10-12 hours, reducing its initial volume by 30% to 50%.
Once cooking is complete, the must is transferred while still warm into wooden barrels, where it is left to age for no less than five years.
Vino Cotto has a deep amber color, a fruity aroma with hints of caramel and honey, a soft, sweet, and lingering taste, and an alcohol content that varies from 12% to 14%. It is a wonderful wine for meditation but also an excellent dessert wine that pairs well with a wide variety of sweets, especially dry pastries.
