Aged Sweet Vino Cotto

Vino Cotto (Cooked Wine) is a traditional product of the Macerata and Ascoli Piceno areas, deeply rooted in the history, culture, and traditions of the Loro Piceno countryside. The grapes used to make Vino Cotto are local white and red varieties: Trebbiano, Sangiovese, and Montepulciano.
The grapes are pressed, and the resulting must is placed in copper cauldrons and slowly boiled over a direct wood fire for about 10-12 hours, until it reduces by 30% to 50% of its original volume.
Once cooking is complete, the hot must is transferred into wooden barrels, where it is left to age for a period of no less than 5 years.
Vino Cotto has a deep amber color; a fruity aroma with hints of caramel and honey; a smooth, sweet, and persistent flavor; and an alcohol content that ranges from 12% to 14%. It is a superb meditation wine, but also an excellent dessert wine, pairing well with a wide variety of sweets, especially dry pastries.
AGEING:
Aged in barrels for at least 5 years, up to 20 years, with periodic topping up.
SERVING TEMPERATURE:
Serve at room temperature.
