Sour Cherries in Their Own Juice – Cardinale
Jar of 314 g
Sour Cherries in Their Own Juice – Cardinale is a traditional Italian preparation made according to ancient rural methods, where fruit, sugar and sunlight slowly transform into an authentic expression of the land.
The sour cherries are harvested during June and July, then combined with sugar and placed in glass demijohns and stainless-steel vats. Exposed to the sun, they undergo a slow natural maceration process, during which the whole fruit releases its own juice and develops its full aromatic intensity. The mixture is stirred daily until September, when the process reaches full maturation. The product is then carefully selected and packaged.
Deep ruby red in colour, it reveals a clean and intense aroma of sour cherry. On the palate, it opens with a gentle natural sweetness that quickly evolves into a fresh, pleasantly acidic and dry finish, typical of sour cherries in their purest expression.
Highly versatile, it is ideal with a wide range of desserts, especially chocolate and vanilla-based pastries, panna cotta, and as a topping for ice cream. It also pairs beautifully with plain yogurt. During the summer season, the liquid portion can be enjoyed as a refreshing drink when diluted with cold water or served over crushed ice, offering a simple yet deeply refreshing experience.
