Package of 300 g
Whole-wheat friselle from Puglia are a true symbol of Southern Italy's gastronomic tradition, and one of the finest examples of this delicacy is represented by the work of Leo Buongusto, a producer from Gravina di Puglia, in the province of Bari. The history of his company, founded in 1979 by Leo's father as a small artisanal venture, is deeply rooted in tradition. Today, Leo continues this legacy with dedication, blending artisanal methods and innovation to create friselle that merge the best of the past and the future.
Whole-wheat friselle stand out for their connection to the peasant and maritime culture: they were designed to be a long-lasting food that could be consumed when needed. This whole-wheat version of friselle uses re-milled whole wheat semolina, which not only imparts a richer flavor and a rustic texture but also increases the nutritional value of the product. Rich in fiber and nutrients, whole-wheat friselle offer a healthy option without compromising traditional taste.
The preparation process for Leo's whole-wheat friselle follows the traditional recipe with an important health-conscious twist. The dough is made from whole durum wheat flour, water, salt, and brewer’s yeast. This combination of ingredients is expertly mixed to achieve an elastic dough. After rising, the dough is shaped into round forms and baked for the first time.
The friselle are then cut in half and subjected to a second baking, known as "biscottatura," which makes them crunchy and hard, ready for long-term storage. Before consumption, they must be soaked in water to soften, a process called "sponzatura." The soaking time can be adjusted according to personal preference: shorter for a crunchier texture or longer for a softer frisella.
Once ready, whole-wheat friselle can be topped with fresh ingredients like tomatoes, extra virgin olive oil, salt, and oregano, enhancing their rustic and authentic flavor. Whole wheat flour not only enriches the taste but also contributes to a heartier and more satisfying texture.
Whole-wheat friselle also offer many customization possibilities: they can be topped with tuna, anchovies, olives, onions, fresh cheeses, or seasonal vegetables, making them versatile and suitable for every palate.
Leo Buongusto’s whole-wheat friselle are much more than just a food item; they represent a living connection to Puglia's traditions and history. Each bite tells of a passion for craftsmanship and respect for recipes handed down through generations. Thanks to the blend of traditional and modern techniques, Leo preserves the quality and authenticity of the product, making his whole-wheat friselle a gastronomic excellence cherished by anyone fortunate enough to taste them.
