The value of Cappelli wheat

Grown organically on the company’s Umbrian farmland, Cappelli wheat is a heritage variety known for its deep roots, tall stalk, and natural resistance to chemical fertilizers—making it ideal for sustainable farming. Compared to modern wheat, it contains fewer sugars and raw proteins, but is richer in B vitamins, minerals, and natural antioxidants.

The wheat is slow stone-milled using natural flint stones, preserving the grain’s full aroma and nutritional integrity.

These tagliatelle are bronze-drawn, giving them a rough, porous surface that holds sauces beautifully. A slow, low-temperature drying process protects the semolina’s nutritional properties, resulting in a pasta that is elastic, flavorful, and easy to digest.
