Capoccia Bio has its roots in the early 1900s, when Cesare Capoccia moved to Morano Osteria, a hamlet of Gualdo Tadino, to passionately cultivate the fertile Umbrian land. Since then, the company has grown with the family, passing down through generations while preserving the region's agricultural traditions. Today, Capoccia Bio has embraced organic farming, reviving ancient local crops that represent a valuable heritage and following a complete and integrated production cycle.
The organic wholemeal emmer (farro dicocco) flour, produced from certified organic grains, is rich in essential vitamins and nutrients. With an aromatic and fragrant taste, it is highly digestible and, thanks to its high content of insoluble fibers, promotes regular intestinal function. This flour is particularly suitable for making unleavened desserts, such as pies, to which it imparts a rich and fragrant flavor.
All semolina and flours are stone-ground using natural granite millstones at a slow-rotating mill, a method that prevents the grains from overheating, preserving their full nutritional value. While this process takes longer, the company is committed to producing high-quality products with love and care.
The organic supply chain extends through the green hills of the Umbrian Apennines, ensuring quality control at every stage of production, from sowing to harvesting, from milling to packaging. This guarantees that no chemical treatments, enhancers, or preservatives are used, respecting the land and ensuring the safety and authenticity of the food produced.
