Flour produced with the Senatore Cappelli durum wheat, stone-ground, is one of the ancient grains with the highest protein content and strength (W=90). This flour has a high digestibility and thanks to the stone milling the grains retain the wheat germ, the noble part of the seed.
This flour is excellent for the preparation of bread, pasta and pizza.
