Its rich and aromatic flavour makes it ideal as a side dish for savoury main courses, or served with crostini and toasted bread. It can also be used as a base for savoury pies and tarts, as a filling for vegetarian preparations, or as an ingredient in dishes inspired by the flavours of autumn.

A gentle processing method helps preserve the character of the ingredients. The cream is lightly acidified to allow pasteurisation at lower temperatures, helping to retain the flavour, aromas and texture of the preparation.

For a softer and less acidic taste, the chef recommends adding a small pinch of baking soda, then gently heating and stirring the cream before use. This simple step helps soften the acidity and allows the full flavour of the cream to be appreciated.
